About Time's Protein Pumpkin Pie with Cinnamon Swirl Protein

Makes two pies

Filling:

  • 29 oz can Libbys Pumpkin
  • 2 eggs
  • 2 egg whites
  • 24 packets of Truvia
  • 1/2 tsp salt- (must put in)
  • 1 1/2 Tablespoons ground cinnamon
  • 1 Tablespoon pumpkin pie spice
  • 3 cups unsweetened almond milk
  • 12 scoops About Time Cinnamon Swirl protein
  • Combine pumpkin with spices, sugar and salt. Add protein and mix.
  • Add almond milk 1 cup at a time. beat eggs and fold in.


Crust:

  • 1 cup almond or walnuts
  • 2 scoops About Time Cinnamon Swirl protein
  • 4 packets Truvia
  • Add nuts to food processor. Grind to a coarse grind. Add protein powder and sugar. Blend until fine or until processor begins to slow.
  • Place pie dishes on a cookie sheet. Spray pie dishes with non stick spray. divide crust in half and spread in the dished coating up the sides of the pie dishes. this will be a loose crust. Do not try to mash together like dough.
  • Ladle in pumpkin filling dividing between the 2 pie dishes. Fill to the rim.
  • Place in a preheated 350 degree oven. Bake for 20 minutes, turn. Bake for 12 minutes longer.
  • Pies will look like they aren't quite done. Do not cook any longer. Remove from oven and cool. Place in refrigerator to completely cool.
  • Slice into 8 pieces and enjoy
